Sol's Mushroom used as our Centerpiece

A couple of Saturdays ago thanks to our dear friend Cristina Preti for whisking me off to the Key Biscayne Farmer's Market the Saturday before we left to Salone del Mobile in Milan. At the market I was overcome with the beauty of the Sol Mushroom stand owned by Spencer. Knowing that as soon as we returned we had to throw a dinner for our dearest friend Maria's birthday my imagination went into full speed.

As soon as I got back into my car I thought how amazing it would be to create a Magic Mushroom Dinner. Everything mushrooms from the dinner to drinks to the decor. The nest day while after our check in at the aiport we headed to the airline lounge where I placed a call to Spencer. Luckily he answered my call and let me know all his mushrooms are grown to order and it took a week to grow the mushrooms we wanted. 

I had spoken with "Chef Thomas" who told me based on my request the best Mushroom idea for the menu would be:

Drinks: Michou's Mushroom Martini's 

Appetizer: Stuffed Mushroom Caps

Main Course: Lion's Mane Mushroom Crab Cakes

Dessert: Candied Mushroom Flan

 

Thomas' Stuffed Mushroom Caps Appetizer

  • 1 pound cremini mushrooms (about 24), stems removed and finely chopped
  • 4 tablespoons extra-virgin olive oil, divided
  • 1 teaspoon kosher salt, divided, plus more to taste
  • 1 teaspoon freshly ground black pepper, divided, plus more to taste
  • 1/4 cup panko breadcrumbs
  • 2 garlic cloves, minced
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons fresh parsley, roughly chopped, divided
  • 2 teaspoons finely grated lemon zest
  • 3 tablespoons freshly squeezed lemon juice (from about 1 lemon)
  • 1/8 teaspoon red pepper flakes (optional)

 Lions Mane Mushroom Crab Cakes:

8 ounces Lion’s Mane mushroom

2 tablespoons mayo

1 teaspoon Dijon mustard

1 large egg

1 teaspoon Worcestershire sauce

1/4 cup diced sweet onions

1 tablespoon finely chopped fresh parsley plus more for garnish

1 1/2 teaspoons Old Bay seasoning

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/3 cup panko breadcrumbs

2 tablespoons olive oil for pan frying

Lemon wedges 

 Candied Mushroom Flan

 

  • 1/4 oz. dried candy cap mushrooms
  • 1 C heavy cream
  • 1/2 C whole milk
  • 1/4 C sugar, divided
  • 2 T water
  • 1/3 C sugar
  • A pinch salt
  • 1 egg
  • 2 egg yolks

Michou's Mushroom Martini

I mentioned to Spencer that my table decor was pink, black and white. I knew based on our dear Maria's personality for always being "avante garde" she would delight in the idea of the striking contrast of pink, black and white. Spencer told me he needed a week, my response : "Spencer start growing". Upon my return from Milan I headed to Spencers Mushroom farm, located in his home, and toured the air conditioned tent to hand harvest the perfect centerpieces for our table decor.

While at Salone del Mobile between all our meetings running from one impressive stand to another I always stop and take photos that inspire me to be recreated in my own way. When we were zooming past the Christofle stand their wall installation formation of their tableware was so jaw dropping I decided to click a photo. Upon my return home I realized our wedding gift from my mother of the enamel Talisman pattern for 18 ppl was the perfect qty to mimic the pattern on their wall as my table setting.

Throughout history, civilizations have treasured mushrooms as a source of strength and healing. Greeks believed eating mushrooms made warriors strong, while the Chinese culture has long considered them a medicinal food for healthy living. And today, Japan has an approved mushroom-based drug to treat cancer.

Mushroom Centerpiece 

Mushrooms are popular in the United States as a flavorful, nutritious food. The average American eats nearly three pounds of mushrooms a year, according to the Agricultural Marketing Resource Center. Many people also use mushrooms for medicinal purposes in dietary powders, liquids and supplements.

“We’ve long known that mushrooms are good for you because of their bioactive compounds, and we’re learning more about their benefits every day,” says dietitian Joyce Prescott, RD. “There are so many varieties to enjoy in a wide variety of dishes, and we can also use them in many ways to supplement our diet and help keep us well.”
